I do not think the average person really cares what was the last book you read. Unless you are a literary snob, it really does not matter. And dating/matchmaking sites know this to be true. The question is give insight into who you are as a person. If the last book that you enjoy reading was [insert classic novel that is required reading for high school here] or [insert book that has been on the NY Times best sellers list here] or [insert name of book that has been made into a movie here] then you are just like everyone else. The kicker is that, while you may be just like everyone else, you do not want to appear to be just like everyone else in your profile.
Going with the tried-and-true classic gives you some staying power as you do not need to revise it, however it makes you look bland and boring. Pick a book that you genuinely like and expound on why you like it... just a little.
Going with the current best seller dates your profile creation. And if you go with the latest book, it makes you appear to be shallow. You just read whatever you are told is good and then agree. If you can make a strong argument for why you like it, then keep it. However, do not summarize it in your profile because chances are that everyone knows what is about.
The about-to-become-a-major-motion-picture choice. This is dangerous as it dates your post creation and makes you look like you are following the crowd. There is nothing more off-putting than reading "it's about to be made into a movie which will make for a great first date." in a freshly sent profile a few weeks after said book's DVD release.
Also while I am talking about book selection, keep the books age appropriate. Men want to be with a woman who reads real books and not young adult fiction or trashy chick lit. You do not have to be reading The Art of War in the original Chinese, however something that states that you are at least mature enough for a relationship.
